I first got into this whole thing with Music 2000 and Music for the playstation - underatted software for the learner and taught me a lot about midi basics and how music worked. (Will post some as soon as I can get hold of a minidisc player)
Been dabbling for years then started getting to grips with Acid software, after figuring cubase was so hard to learn without tuition I found acid so much more simple, although I've heard of limitations I never use midi so don't really mind. (midi and vista support has since been added)
Using currently, acid 6.0, reaktor 4, cool ed pro 2.0, soundforum (free synth look it up) Absynth 3
Hardware, evolution mk425c midi keys, but hope to get an mpc soon, and Kazoo
