I have a Yahama FG-335 acoustic which I sometimes use for open tuning songs. I usually play an Ibanez acoustic electric guitar when I'm playing out. I record directly to PC with a Sennheiser Evolution mic. I use Cakewalk's Sonar 3 Producer Edition for my recording and mixing.Anything else?
