I just read one of my old blogs about spring. Last year was colder for sure, but sometime in March it got warmer!!! This winter was not so cold. It never got to freezing here. But! It will never end! This has been THE LONGEST winter ever. March comes in like a lion and goes out like a lamb. Or as John Belushi said....In certain South American counrties, March comes in like an Emu and goes out like a different Emu!

Why is VALENTINES DAY in February? Because roses do not bloom in Feb. Now they can charge you 5 times the going rate to buy a cliche present for Mom, Wife. Girlfriend, Mistress, Daughter, etc. And the biggest morons buy them on a street corner. Hi honey, I was thinking of you.......at a red light!

The Cubs won tonight 4 to 3. They should have won 5 to ZERO. The umpires made 2 bad calls that scored 3 runs. Alphonso Sorry-A- hole cost them another run. He might have saved a run earlier on a great play in center field. But the very next inning he was picked off first base on the old Rick Sutcliff move that has NEVER FOOLED ANYBODY except the Cubs That is when the pitcher fakes a pick off at third in hopes of enticing the dummy at first to run. A player paid $17,000,000 per year fell for that. It proves that for every run Sorry A Hole produces, he costs the team a run, so it is a 17 million dollar wash. There has to be a $100,000 jerk off available to replace him. 103 years and counting! No leadership at the top. This new manager will be another foot note in the Cubs wall of shame.

Donna told me this as I was not here. A certain 7 year old was in the ladies room. She called out Grammy! Help me! Donna went in and there was the little lady, on the potty with the garbage can over her head. It has metal palm trees on it and her hair was caught in one of them. Hence Bucket head!

Chicago PIZZA
I have been working on a great pizza crust for years and I have found it! Here is the recipe. 2 THIN CRUST PIZZA's
285 grams flour, I use bread flour
(435 grams is 16 1/2 oz. and/or 3 1/2 cups) never pack flour it will weigh too much, that is why many recipes have you sift the flour, so it is fluffed up.
2 ts sugar
1/4 ts yeast
put these 3 in a mixer and aerate for approx 2 mins.
ADD
1 1/4 cup ice water and mix on speed #2. The best way to get ice water is put it in a travel cup then use the top of the cup to keep the ice out of the measuring cup. This is not a kneading, just a mix until it looks a little like dough, about 4 mins.
ten minute beer break to let the flour rest, and the sugar and yeast to get busy.
Mix again and add 1 1/2 ts. salt and
1 TB veg oil. I use Crisco, melted but not hot.
Mix until it looks like real dough with a satin smooth texture. This when you can adjust flour/water ratio. The dough should be a little tacky. It should stick to your fingers but come away easily. Too much flour will make a heavy dense dough.
Put the dough in a greased, glass, bowl. Make sure all the dough has a thin (spray) oil coating. Cover and put in the fridge for 24 up to 36 hours.
The next day take it out to warm. If you are making one pizza cut the dough in half or thirds and freeze the unused portion in a baggie . Bring what you are using to room temperature on an oiled plate/pan/cookie sheet, whatever and cover if with oiled saran wrap. It seems like a lot of oil but a little spray oil goes a long way. This will take at least an hour, up to 2 hours in the winter. If you use cold dough it will be a tough crust!
The dough should flatten out while proofing at this stage rather that rising higher.
Pre heat oven to 450 degrees.
I cook mine on an upside down large pizza pan. If you have a baking stone "You are the MAN"! I leave the pizza pan in the oven on the top shelf.
Roll out the dough thin on a cutting board or floured counter top! The thickness of the dough now will determine the thickness of the crust. This will not rise except around the edges when cooked.
If the dough is too elastic it needs to rest longer. It should roll out easily and not shrink back. If you are using a pizza pan w/out a cooking stone transfer the dough to your hot pizza pan, roll out further if needed, cook for 3 minutes (skip this if you have a stone), then add toppings.
Turn the pizza after 9 minutes then finish cooking it for about 5/6 mins.
If you top w/ sausage, Jimmy Dean Italian is the way to go.
Sauce: 8 oz good tomato sauce-not walmart, then reduced to desired consistency,
2 tsp oregano, 1/4 ts salt,
1/8 ts pepper, 1/4 ts sugar,
heavy 1/4 ts garlic powder, pinch of crushed red chili peppers.

A few weeks ago the most popular "Rock" station in the Tampa area switched from repetitive classic rock to all talk! They finally realized that we do not want, or need to hear the SAME SIX SONGS every day and night! I will play Pink Floyd, when I want to hear them. It will be about five years from now! Free Bird has flown into the ground in Tampa in 2012!!!
