I just now noticed the comment you left me!
For my orchestral sounds I use soundfonts, most of them come from hammersound (.com i think) The flute you hear is also a soundfont plus reverb and all that good stuff. I have my keyboard hooked-up to my computer via a MIDI-USB adapter so almost all my keyboard sounds are soundfonts instead of the actual keyboard.
