Adobe Audition 1.5 - to me this is the most versatile user friendly product out. i reccomened 1.5 because 2.0 has a few flaws (just because the number is bigger doesn't means its better) recording, editing, and burning cds can be done with this.
i ve also used Sony acid before, but i ended up going back to this.

Acoustica Mixcraft - so simple but powerful. i love this software, good for mixing and recording, very simple. i know a lot of peeps who just wanna record use this.
it also has a few good built in FX, like the compressors, echos, reverbs, and equalizers.
